Apple Pecan Kale Salad – With Mustard Vinaigrette

This is such a simple and delicious salad that I love to make for holidays! The mustard vinaigrette is the 3:2:1 recipe from Jane Esselstyn.

INGREDIENTS for Salad

  • ✓ 1 bunch of Kale, washed, drained, cut or ripped up into bit-sized pieces
  • ✓ 1 handful of Spinach, washed, drained
  • ✓ 1 cup pecans, halved
  • ✓ 2 apples, washed and cut in bite-sized pieces
  • ✓ ½ cup thinly sliced red onions
  • ✓ ½ cup cut up red cabbage
  • ✓ 1 tablespoon fresh lemon juice

INGREDIENTS for Dressing

 

  • ¾ cup white rice vinegar

  • ½ cup Dijon mustard

  • ¼ cup maple syrup

  1. Add the kale to a big salad bowl and add the lemon juice. Massage the kale for a minute. Add all of the rest of the washed/cut vegetables into the bowl and mix up well
  2. In a medium-sized glass jar (with a lid) add all of the dressing ingredients. Place the lid on tight and shake it up well.
  3. Pour some of the dressing on the salad and mix up well. Keep the rest of the dressing on the side in case someone wants to add more to their salad.
