Description

This is a fun recipe to do with kids as it involves them cutting up the filo pastry and creating their own little parcels, with the added bonus of being able to see and enjoy the finished product.  Feel free to switch it up and try different fillings.  Serve them with a homemade salsa or a lightly spiced oil-free hummus.

  • ✓ 1 onion, diced
  • ✓ 250g winter greens, finely chopped (try kale, chard, collard greens, spinach or a combination)
  • ✓ 2 tablespoons fresh dill, chopped
  • ✓ Water to sauté
  • ✓ Ready-made filo sheets
  • ✓ Soy milk to brush parcels
  1. Heat a few tablespoons of the water in a non-stick frying pan. Once the water is bubbling, add the onion and sauté until soft and translucent (about 4 minutes)
  2. Add the winter greens and continue to sauté until soft and cooked through. Add more water as needed
  3. Allow the mixture to cool and drain off excess liquid
  4. Mix in the fresh dill
  5. Lay down a sheet of filo on a clean, dry surface with the longer edge of the sheet towards you. Cut into 5 even strips widthways. Place a spoonful of filling onto each strip about 1 inch from the edge. Fold one corner up over the filling to create a triangle. Continue folding away from you until the whole strip is folded to form a triangle. Repeat with remaining strips until you have used up all your filling
  6. Brush the top of each parcel with soy milk
  7. Bake at 180C (350F) for 20 minutes until golden crisp. Serve warm with your dip of choice
