Tofu Scramble

  • ✓ 2 blocks for firm tofu (drained)
  • ✓ 1 onion (chopped)
  • ✓ pieces of garlic (chopped)
  • ✓ 2 tbsp nutritional yeast
  • ✓ 2 cups of vegies (spinach, shredded carrots, broccoli, etc.)
  • ✓ Seasonings: 1tsp turmeric, salt and pepper to taste
  1. Dry sauté the chopped onion and garlic. (If needed, add a tbsp of water to prevent from sticking).
  2. Add your mixture of vegetables and cook for a couple of minutes.
  3. Finally, crumble the tofu block and add it to the pot with the seasonings and cook for another minute.

VARIATIONS:
- To mimic the scramble egg flavor, add 1⁄4 tsp of black salt at the end.
- For a spicy flavor, add some cayenne pepper or just serve with hot sauce
- You can use whatever veggie combinations you like; my guide is usually to try to make it as colorful as I can
