  • ✓ 4 cups of rice (cooked)
  • ✓ 2-3 cucumbers (sliced)
  • ✓ 2-3 tomatoes (sliced)
  • ✓ 1-2 avocadoes (sliced)
  • ✓ Optional – nori seaweed sheets, cilantro, red peppers
  1. While rice is cooking, slice the cucumbers, avocado and tomatoes.
  2. To put it together, start by designing the bottom of a deep dish with some veggies (this will be the top of the “cake”).
  3. Then cover it with a 1⁄2 inch layer of cooked rice. Next add a layer of cucumber slices, then rice again. Repeat this step with the rest of the ingredients.
  4. To serve, place a plate upside down on the sushi dish and flip over.

NOTES:
To prevent from sticking to the dish, you can put plastic wrap at the bottom of the dish before you start layering the cake.

Wet hands and press down the rice, to make sure it sticks well.

Seaweed is nice, but you can totally make this recipe without it.

Serve with pickle ginger, Soy sauce and wasabi (if you can handle it).
