Strawberry Cheesecake Bites

Description

This is a fun light version of the strawberry cheesecake that leaves you feeling energized instead of stuffed.

  • ✓ 2 lb. strawberries
  • ✓ 1 cup steamed Japanese sweet potato, peeled and mashed
  • ✓ 2 tablespoons lemon juice
  • ✓ 1/4 cup date sugar or sweetener of choice (adjust amount according to sweetener)
  • ✓ pinch of salt (optional)
  • ✓ 2 teaspoons vanilla extract
  • ✓ 1/2 cup water
  • ✓ 1 teaspoon agar agar powder
  1. Remove the hulls from the strawberries and cut a cone shape out of the center.
  2. Slice the tips off of the strawberries, so that they stand up.
  3. Place all of the ingredients except the strawberries, water, and agar powder into a blender.
  4. Stir the agar powder into the water in a small saucepan.
  5. Bring the water and agar mixture to a boil and simmer for 5 minutes stirring constantly.
  6. Pour the mixture into the blender, and blend all ingredients until smooth.
  7. Remove the lid and allow to cool for 5 minutes in the refrigerator.
  8. Spoon mixture into a pastry bag or a sandwich bag. Then, cut off a corner if using a sandwich bag.
  9. Pipe the mixture into the strawberries letting it overflow on the top.
