Simple Instant Pot Japanese Sweet Potato Red Lentil Soup

Description

This is an easy, delicious soup great for this time of year when you are busy and the weather is cooler.

  • ✓ 6 cups filtered water
  • ✓ 1 yellow onion, diced
  • ✓ 1 cup red lentils, rinsed and drained
  • ✓ 5 - 6 stalks celery, sliced
  • ✓ 5 carrots, sliced
  • ✓ 2 Japanese sweet potatoes, sliced
  • ✓ 1 tablespoon Ume plum vinegar, or to taste (optional)
  • ✓ salt and pepper to taste
  1. Pour the water into the instant pot.
  2. Add the other ingredients except for the vinegar, salt and pepper and stir.
  3. Place the lid on the Instant Pot and turn the valve to “sealing”.
  4. Press the Pressure Cook (or Manual on older models) setting and then the + or - button to set the timer for 6 minutes.
  5. When the timer goes off, let the pressure come down naturally. This could take 20 - 30 minutes.
  6. When the pressure is down, remove the lid and stir.
  7. Stir in the Ume Vinegar, salt and pepper.
