Description

The inspiration for this recipe came from The Simple Veganista (www.simple-veganista.com). You can adjust the flavors to your liking.

  • ✓ 3 cups of tomatoes – diced
  • ✓ 1 small red bell pepper – diced
  • ✓ 1 stick of celery – diced
  • ✓ ¼ cup of red onion – finely diced
  • ✓ 1 small zucchini – diced
  • ✓ ¾ cup of corn
  • ✓ 1-2 cloves of garlic
  • ✓ 2 teaspoons of chili powder
  • ✓ 1 teaspoon of cumin
  • ✓ 1 teaspoon of oregano – dried
  • ✓ ¼ teaspoon of salt (or to taste)
  • ✓ Chopped cilantro (as much as you’d like) - or parsley

Ingredients for Nut Meat

  • 1 cup of walnuts

  • 1 cup of sliced mushrooms

  • 1-2 teaspoons of cumin (more if you like a stronger taste)

  • 2 teaspoons of coriander powder

  • 1 teaspoon of soy sauce (tamari, coconut aminos or salt)

 

To serve

Lime wedges, freshly chopped green onions, cashew cream, a hot sauce

Vegetables

  1. Dice the veggies and combine them all in a large bowl.
  2. Puree about half of the veggies in a food processor.
  3. Add the pureed veggies to the diced veggies and mix well.

Nut Meat

Place all ingredients in a food processor and pulse until crumbly. Do not over do it, as it will turn into a paste.

 

To serve

  1. Place the vegetable chili in bowls and top with the nut meat. 

  2. Add cashew cream and any other garnishes you’d like, top with a sprinkle of fresh cilantro and chopped green onions. Serve with a savory Cashew Cream
