Quinoa With Leeks

  • ✓ 2 small leeks
  • ✓ 1½ cups water or vegetable broth
  • ✓ 1 cup quinoa
  • ✓ ¼ cup canned tomatoes
  • ✓ ½ tablespoon ground cumin
  • ✓ 1 teaspoon garlic powder
  • ✓ ¼ teaspoon turmeric

Next, follow the steps to finalize your dish and finally be able to enjoy it!

  1. Slice 2 small leeks in half length-wise, removing the darker green top and the roots at the bottom, and wash larger leaves thoroughly, then chop (cross-wise) into thin slices; leeks can be dirty, so you may need to wash the slices again
  2. Rinse 1 cup quinoa thoroughly (as described, you want to remove the bitter coating called saponin, which is its natural defense against birds and insects)
  3. In a stock pan without oil, cook leeks till limp and reduced
  4. Add ground cumin, garlic powder, turmeric; stir and mix well
  5. Add 1 cup quinoa and cook approximately 2 minutes
  6. Add 1 1/2 cups water (or veg. stock) and 1/4 cup canned tomatoes; bring to a boil; lower heat and simmer, covered, for 15-20 minutes until done Serves 4.
