Persimmon Pudding

  • ✓ 3 persimmons (peeling makes the pudding a little smoother)
  • ✓ 2 pitted dates (Medjool dates work best)
  • ✓ ½ cup raw cashews (boiled for 10 minutes if you don’t have a high-speed blender)
  • ✓ ½ teaspoon ground cinnamon (or more if desired)
  • ✓ ¼ teaspoon ground nutmeg (more if desired)
  • ✓ a splash of lemon juice
  • ✓ a few tablespoons of unsweetened almond milk or other plant milk

Whirl all ingredients in a high-speed blender until well blended. Pour into bowls and serve immediately, or cover and place in the refrigerator to chill before serving.
