✓ 3 persimmons (peeling makes the pudding a little smoother)
✓ 2 pitted dates (Medjool dates work best)
✓ ½ cup raw cashews (boiled for 10 minutes if you don’t have a high-speed blender)
✓ ½ teaspoon ground cinnamon (or more if desired)
✓ ¼ teaspoon ground nutmeg (more if desired)
✓ a splash of lemon juice
✓ a few tablespoons of unsweetened almond milk or other plant milk
Instructions
Whirl all ingredients in a high-speed blender until well blended. Pour into bowls and serve immediately, or cover and place in the refrigerator to chill before serving.
