Description

I love citrus! Back in the early 2000s for an Ethnic Vegetarian Cooking class that I created and taught, I developed a rice pudding recipe where I cooked the rice in orange or, better, tangerine (when available) juice.

  • ✓ 2 ½ cups prepared brown rice or 1 cup brown rice soaked overnight.
  • ✓ Ample water for rice and pinch of salt
  • ✓ Juice of one orange or tangerine
  • ✓ 2 cups of unsweetened plant milk – try vanilla rice milk but oat or soy or other plant milk is fine. 2 cups would be about ½ of a standard carton.
  • ✓ 2 cinnamon sticks
  • ✓ 12 cloves
  • ✓ (optional) sweetener – try 2 tablespoon pomegranate molasses or 1 tablespoon maple syrup
  • ✓ 1 t vanilla or ½ teaspoon rose syrup
  • ✓ (optional) 1 teaspoon orange peel (use a zester or microplane and avoid the bitter white pith underneath) cut into thin 1/2” lengths (or orange zest)
  • ✓ (optional) 1 teaspoon cocoa
  • ✓ (optional) few strands of saffron per serving
  • ✓ (optional) 3 tablespoon almond slivers

Next, follow the steps to finalize your dish and finally be able to enjoy it!

  1. We’ll discuss recent news about arsenic in rice. Because of this I no longer cook brown rice the traditional way with a 1 part rice to 2 parts water ratio simmered for 50m with a tightly covered lid. Instead, soak the rice overnight, drain the water, rinse a few times, and cook with a pinch of salt in ample water like you would cook pasta.
  2. After the rice comes to a rolling boil, reduce the heat to medium high. If the water drops below the level of the rice, add some more water.
  3. After 35 minutes if there is any water above the rice, drain that water.
  4. Add the citrus juice and cover, reducing the heat and simmering on low for another 15m.
  5. Turn the heat off; let the rice sit for 5 minutes then open the pot and fluff it with a fork.
  6. Add the plant milk, cinnamon, cloves and, if using, sweetener.
  7. Simmer till thick, uncovered and stirring occasionally, approximately 25-25m.
