Description

Gravy is a delicious addition to any meal but is often quite heavy and calorific. This recipe is an excellent way to keep the flavor but not all the calories. The mushrooms provide a nice creaminess and the soy and miso add that umami flavor.

  • ✓ 200g (roughly 2 cups) mushrooms, roughly chopped
  • ✓ 3 tablespoons wholewheat flour
  • ✓ 3 cups vegetable stock
  • ✓ 1 tablespoon miso paste
  • ✓ 1 tablespoon soy sauce
  • ✓ 1 teaspoon onion granules
  • ✓ 1⁄4 cup (4 tablespoons) nutritional yeast
  • ✓ Black pepper to taste
  1. Over medium heat, sauté the mushrooms in a few tablespoons of water until they just turn brown.
  2. Add the wholewheat flour and gently stir to coat the mushrooms.
  3. Add the vegetable stock and bring to a boil, whisking constantly.
  4. Stir in the remaining ingredients, lower heat and simmer for a few minutes until thickened.
  5. If a smooth gravy is preferred, puree the gravy with a stick blender.
