Nacho Sauce

  • ✓ 1 1⁄2 cups cashews
  • ✓ 1/2 cup nutritional yeast
  • ✓ 1 whole roasted red pepper
  • ✓ 1 1⁄2 teaspoon cumin
  • ✓ 1 1⁄2 teaspoon garlic powder
  • ✓ 1⁄2 teaspoon (or more) salt
  • ✓ 2 cups water

Put all ingredients in a powerful blender and blend until smooth.

Notes

If your blender is not too powerful, you should soak the cashews overnight or for 1 hour in hot water prior to using them Sauce will thicken as it sits so you’ll have to adjust for that.

VARIATIONS

  1. For a spicy version of this sauce, you can replace the roasted red pepper with 1⁄2 chili pepper or use 1 tsp cayenne powder.
  2. For a nut-free sauce, replace the nuts with oats or cannellini beans; (results will vary so you’ll have to adjust the seasonings accordingly)
