Mini Sweet Potato Fritters

Description

Yield: 24 Fritters                                  

Top these with plain vegan yogurt, and sprinkle with green onions for a tasty colorful appetizer.

  • ✓ 4 cups grated sweet potato
  • ✓ 1/4 cup chickpea flour
  • ✓ 2 tablespoons flax seeds, ground
  • ✓ 1/4 teaspoon garlic granules
  • ✓ 1/4 teaspoon dried thyme
  • ✓ 1/4 teaspoon dried sage
  • ✓ 1 pinch nutmeg
  • ✓ 1/2 teaspoon salt, or to taste
  • ✓ Pepper to taste
  • ✓ 2 teaspoons potato starch
  1. Combine all ingredients, and let them sit for 15 minutes
  2. Preheat the oven to 400 degrees, and line a cookie sheet with parchment paper
  3. Form tablespoon sized balls, and place them on the parchment paper-lined cookie sheets
  4. Flatten them with a fork
  5. Bake for 40 - 45 minutes or until done; baking time depends on how thin you flatten them
  6. Allow the fritters to cool for one minute on the cookie sheets. Then, transfer them to a wire rack
