Garlic-Roasted Green Beans With Shallots & Almonds

  • ✓ 1 lb. fresh French green beans
  • ✓ 3 large shallots peeled, and cut into thin slivers
  • ✓ 5 large cloves garlic, peeled and cut into thin slices
  • ✓ 1 tablespoon balsamic glaze and 1 tablespoon veggie broth, mixed
  • ✓ salt and fresh ground black pepper to taste
  • ✓ 2-3 tablespoons sliced almonds (could also use slivered almonds)
  • ✓ Put beans into a mixing bowl, glaza/broth mix, salt, and pepper, and use a wooden spoon to toss until beans, shallots, and garlic are coated.
  • ✓ Spray the roasting pan with nonstick spray if desired, and add the veggies.
  • ✓ Roast 30 minutes, or until shallots and garlic are lightly browned.
  • ✓ Toast sliced almonds in a hot, dry skillet for a few minutes, stirring constantly and being careful not to burn.

  1. Preheat the oven to 450F/230C. (If cooking other things you can use a slightly lower temperature, just increase the time)
  2. Trim ends from green beans; cut in half into pieces about 2 in. long
  3. Peel & slice shallots and garlic into thin slices (not too thin or they cook too quickly.)
