Garlic Roasted Fingerlings

Description

This is a great side dish for all potato lovers! The entire family loves this recipe and it works great to make on a busy weekday night!

  • ✓ 1-2 packages of small fingerling potatoes
  • ✓ 1 package of sweet peppers of various colors, washed and sliced
  • ✓ 1 Tablespoon of yellow mustard seeds
  • ✓ 1 teaspoon garlic powder or 3 cloves fresh garlic, minced
  • ✓ ½ teaspoon paprika
  • ✓ Salt and pepper to taste (optional)
  1. Wash the potatoes and place in a pot of water.
  2. Boil the potatoes until just fork tender.
  3. Drain the potatoes.
  4. Very carefully (not to get burned), cut the potatoes in half. Or, wait 5 -10 min to let cool first and then cut.
  5. Add in the peppers, garlic, paprika and mustard seeds and mix well.
  6. Place on a baking sheet lined with parchment paper or silicone mat.
  7. Bake in a preheated oven at 400 degrees until some edges get browned, about 10-15 minutes.
  8. Serve right away
