  • ✓ 2 cans of beans – drained and rinsed
  • ✓ 2 jars of salsa – pick your favorite salsa
  • ✓ 1 can of corn – drained and rinsed
  • ✓ *cilantro, lemon juice (optional)
  1. Rinse and drain the beans and corn and then mix in a medium bowl with the salsa.
  2. Warm it up.
  3. To serve, sprinkle with a little chopped cilantro and a little lemon juice.

NOTES:
- We sometimes eat it cold – like a dip with corn chips
- Or hot and serve it over rice or other cooked grain

VARIATIONS:
- For a more “meat-like” texture, I sometimes use ground TVP (texture vegetable protein);  Place 1 cup of dry TVP in a bowl and cover with plenty of water, then let re-hydrate for 5 min. Drain the TVP, add to the rest of the ingredients and stir well until warm.
