Crock-Pot Pizza Potatoes

Description

Prep: 20 minutes Cook: 6-8 hours on LOW. Serves:6-8

  • ✓ 4 cups potatoes, thinly sliced (use a mandolin)
  • ✓ 2-3 cups pizza toppings
  • ✓ 2 15 oz. cans fat-free pizza sauce or marinara sauce
  • ✓ 1/4 cup water
  • ✓ Seasonings like an Italian blend, garlic powder, cayenne, nutritional yeast

Pizza Toppings might include any or all of the following:

  • sliced onion 

  • sliced mushrooms 

  • sliced or diced bell peppers 

  • sliced tomatoes 

  • sliced water-packed artichoke hearts  

  • sliced black olives  

  • fresh spinach

  • basil ribbons

  • cannellini beans (to make dish hearty enough for an entrée)

  1. Mix the water into the sauce and set aside.
  2. Place 2 cups of the potatoes in the bottom of the Crock-pot.
  3. Layer all of the toppings that you choose to include over the potatoes.
  4. Cover with half of the sauce. Layer on the remaining 2 cups of potatoes and finish with the sauce.
  5. Cover and cook on low for 6-8 hours.
