Description

Makes 12 small rolls

The bananas are easier to slice if you remove one section of the peel and slice with the rest of the peel on.   If you are using a dehydrator instead of an oven, dehydrate the slices for 6 hours at 105 degrees on a non-stick sheet on a mesh dehydrator sheet.  Flip them, and dehydrate for 2 hours longer.  Spread the date paste, sprinkle with cinnamon and roll as instructed below and dehydrate for 6 more hours.

  • ✓ 4 bananas (very ripe but still firm)
  • ✓ 1 cup medjool dates, pitted
  • ✓ 1/2 cup water
  • ✓ 1/2 teaspoon vanilla extract
  • ✓ 1 pinch of salt (optional)
  • ✓ cinnamon
  1. Preheat the oven to 175’ F
  2. Slice each banana lengthwise into 3 pieces
  3. Place slices on a parchment paper-lined cooling rack on a large cookie sheet (far enough apart to slide a small fork or offset spatula under each slice
  4. Bake for 2 hours, then allow to cool for 15 minutes
  5. Slide an offset spatula or a fork under each slice and flip them over
  6. Return the slices to the oven for another 2 hours
  7. Blend the dates, water, vanilla extract and salt until smooth
  8. Remove the banana slices from the oven, and spread some of the date mixture on each slice
  9. Sprinkle cinnamon on the date mixture
  10. Roll the banana slices into little cinnamon rolls and return to the oven
  11. Continue to bake for an hour or two depending on the thickness of the slices
  12. Allow to cool, and enjoy or refrigerate
