Tofu and Vegetable Salad With A Garlic Tahini Dressing

This is my all-time favorite lunch. I have it most days. The raw vegetables and pumpkin seeds add a nice crunch and the garlic tahini dressing has a delicious umami flavor. The recipe for the dressing is from the Clean Food Dirty Girl website.

I) Salad

  • ✓ 1 cup cooked quinoa
  • ✓ 1/2 cup diced cucumber
  • ✓ 1/2 cup diced red sweet pepper
  • ✓ 1/2 cup cherry tomatoes
  • ✓ 1 cup shredded kale
  • ✓ 1/2 cup diced firm tofu
  • ✓ 2 tablespoons pumpkin seeds
  • ✓ 2 tablespoons dried cranberries

II) Garlic Tahini Dressing

  • 3/4 cup water

  • 2/3 cup tahini

  • 2 tablespoons coconut aminos

  • 1 tablespoon brown rice vinegar

  • 1 small garlic clove, peeled and left whole

  • 1/2 teaspoon salt

  1. Place all of the dressing ingredients into your blender and blend until smooth.
  2. Place all salad ingredients in a bowl.
  3. Top the salad with a couple of tablespoons of the dressing and mix together.
