✓ 3-6 large zucchini depending on how hungry you are
✓ Veggie broth or water for sauteing
✓ 1⁄2-1 teaspoon garlic powder
✓ 1 teaspoon-1 tablespoon balsamic vinegar
✓ 1 tablespoon dried parsley
✓ Crushed red pepper flakes
✓ Optional white or yellow miso paste for salty flavor (1 tsp)
Optional topping:
Nutritional yeast aka nooch
Instructions
Spiralize or julienne slice your zucchini noodles, depending on the tool you have.
Eat raw with balsamic and spices (minus the broth) or heat skillet and add 1 Tbs-2 Tbs or so of veggie broth to the pan.
Cook zoodles for 1-2 minutes just until slightly softened and broth is evaporated.
Toss in balsamic and spices (if using miso, you'll want to dissolve it into this mixture first before adding to zoodles) and cook for just about 30 seconds to another minute more to blend everything together then sprinkle with nooch and enjoy!
Option: skip the zoodles altogether and enjoy with mung bean (or regular) pasta!
