In a large non-stick pan over medium heat add aqua fava and bring to a simmer.
Add lime juice, lime zest, garlic, and onions. Cook until onions are translucent, about 2 -3 minutes.
Turn heat down to medium-low. Add the chili flakes, and cilantro stir to incorporate. Cook for 2 minutes, stirring to prevent sticking.
Turn heat down to low, add rice wine, and maple syrup, now add air fried tofu. Continue cooking until liquid becomes a syrup, about 5 - 8 minutes, every cooking range is different, so be patient.
Serve hot and sprinkle with salt before serving.
If used as a sauce for pasta, steamed vegetables, air fried potatoes, or rice bowl do not cook to a thick syrup. Only reduce liquid by 1⁄2.
