Sweet Chile Lime Sauce With Bites

I) TOFU BITES

1 package Extra Firm Tofu - cubed into desired sizes. Drained, rinsed, and pat dry. 1⁄4 Cup Aqua fava

II) SAUCE

  • ✓ 1⁄4 cup aqua fava
  • ✓ 1⁄4 cup fresh lime juice, the juice of 2 large limes
  • ✓ 1 tablespoon lime zest/ 1 large lime - organic would be best
  • ✓ 2 teaspoons minced garlic or 1 1⁄2 tsp garlic powder
  • ✓ 1⁄4 cup minced sweet onion
  • ✓ 1 1⁄2 teaspoons chili flakes or 1 tsp ground chili powder, hot not paprika
  • ✓ 2 tablespoons rice wine
  • ✓ 1 tablespoon dried cilantro leaves
  • ✓ 1⁄4 cup maple syrup
  • ✓ 1⁄2 teaspoon sea salt or your favorite salt, this is optional

I) TOFU BITES

  1. Toss tofu in aqua fava and place in a preheated air fryer at 350° for 20 - 25 minutes until golden brown on all sides.

  2. I use parchment paper in the air fryer to prevent sticking.

  3. As the tofu cooks start making the Sauce.

II) SAUCE

  1. In a large non-stick pan over medium heat add aqua fava and bring to a simmer.
  2. Add lime juice, lime zest, garlic, and onions. Cook until onions are translucent, about 2 -3 minutes.
  3. Turn heat down to medium-low. Add the chili flakes, and cilantro stir to incorporate. Cook for 2 minutes, stirring to prevent sticking.
  4. Turn heat down to low, add rice wine, and maple syrup, now add air fried tofu. Continue cooking until liquid becomes a syrup, about 5 - 8 minutes, every cooking range is different, so be patient.
  5. Serve hot and sprinkle with salt before serving.
  6. If used as a sauce for pasta, steamed vegetables, air fried potatoes, or rice bowl do not cook to a thick syrup. Only reduce liquid by 1⁄2.
