Description

This is an easy way to make some delicious stuffed mushrooms that you can use
as appetizers or part of your main dish.

  • ✓ 16 ounces white button mushrooms, cleaned with stems removed
  • ✓ 1 cup cashews
  • ✓ 16 ounces firm tofu, drained
  • ✓ 1⁄2 cup nutritional yeast
  • ✓ 3 1⁄2 tablespoons lemon juice
  • ✓ 1⁄2 - 1 teaspoon salt
  • ✓ 1⁄4 teaspoon black pepper
  • ✓ 3 teaspoons Italian seasoning
  • ✓ 1 1⁄2 teaspoons garlic powder
  • ✓ Chopped fresh chives
  1. Add the mushroom caps upside down on your baking dish.
  2. Preheat oven or air fryer to 400 degrees
  3. In a small processor blend up the cashews until no big chunks are visible. Add this to a food processor along with all the other ingredients (except chives).
  4. Blend until smooth.
  5. Using a small spoon, fill up the mushroom caps with the mixture.
  6. Place in the oven or air fryer for about 18 minutes, or until desired doneness.
  7. Add fresh chives before serving.
  8. Optional: if you are short on time or ingredients, you can use your favorite hummus to stuff the mushrooms.
