Description

In today’s dish, I picked a simple but tasty one, stovetop apple crunch. I’ve made (and taught) apple crisp and other crisps like blueberry crisp but this dish is faster and still tasty – with no added fat!

Apples are a good source of fiber; a medium apple has about 4g. Apples are good sources of vitamin C and antioxidants. They taste sweet but the natural sugars and high water content make them a low glycemic food. Oats are a great source of manganese; one serving gives about 60% of the Daily Value. Oats are a good source of phosphorus, magnesium, copper, iron, zinc, folate, several B vitamins, fiber, and antioxidants.

  • ✓ 5T rolled oats
  • ✓ 1 apple cut into ½” cubes; I recommend firm, fresh, juicy apples like Fuji, Honeycrisp, Pink Lady, Granny Smith, or what I am using, SugarBee (a found apple thought to be a cross with Honeycrisp and some unidentified variety)
  • ✓ 3 pitted dates (a 100g serving has 7g fiber; they are good sources of potassium, copper, vitamin B6, and antioxidants) cut into ½” pieces; if the dates are hard, try first soaking them in warm water for a half hour or so
  • ✓ Up to 5 walnut or pecan halves or about 10 shelled pistachios (walnut has a good omega 6/omega 3 ratio; the ideal is close to 1 with walnuts around 4 and pistachios almost 50)
  • ✓ 1t cinnamon (more or less to taste)
  • ✓ 1t vanilla extract

# Prepare nuts

  • If walnut, use your hands to roughly crush into large pieces
  • If pecan, try using your hands but if that doesn’t work, use a knife to roughly cut into large pieces
  • If pistachio, briefly put in a food processor or spice grinder to get a rough chop
  1. (optional) Put oats in a sauce pan and toast on medium to medium-high, stirring occasionaly for a minute or two till you get a nice toasted aroma; remove from pan
  2. Put apples and dates into the pan and gently pan roast on low-medium heat for about 5 minutes, stirring occasionally and keeping covered otherwise
  3. Add oats (whether optionally toasted or not), nuts, and cinnamon; stir and cover
  4. After a minute or so, remove cover, mix in vanilla, and serve

Depending on size of apple serves about 3 or maybe 4
