SPIRALIZED ZUCCHINI NOODLES

 2- 3 Servings

  • ✓ 2 – 3 medium zucchini spiralized as noodles
  • ✓ 1 medium onion thinly sliced
  • ✓ 2 cloves garlic minced
  • ✓ 1 tomato diced
  • ✓ ¼ cup sundried tomatoes (not in oil)
  • ✓ 1/8 cup low-sodium broth or water
  • ✓ 1 can white beans or garbanzo beans (optional)
  1. Spiralize your zucchini into noodles (NOTE: if you do not have a spiralizer, you can slice the zucchini or cut it into small pieces
  2. In a saucepan, set the heat to medium, sauté the onion with a tablespoon of water or low-sodium broth until soft, add garlic and sauté for one more minute. Add one tablespoon of liquid as needed to keep onion and garlic from sticking.
  3. When onion is translucent add the tomatoes, spiralized zucchini noodles and sundried tomatoes.
  4. Sauté until the zucchini is tender. I usually sauté for just 2 -3 minutes, I like the zucchini to get tender but not too soft.

Serving suggestions: I like to serve over a bed of fresh greens, as a side dish with some tofu or tempeh, or add ½ cup of white beans or garbanzo beans for a complete meal.
