Spinach Salad With Apricot Vinaigrette

  • ✓ Fresh organic baby spinach (~ 2-3 cups per person)
  • ✓ Organic strawberries, sliced (~3-4 per person)
  • ✓ Sliced or shaved organic carrots (~1/2-1 carrot per person)
  • ✓ Medium red onion, slivered
  • ✓ 1 tablespoon per person roasted walnuts, chopped, optional (~1 tablespoon per person) Apricot Vinaigrette, serve on side
  1. In a large salad bowl, layer ingredients in the order listed above.
  2. Toss the salad.
  3. Serve with Apricot Vinaigrette.
