Spicy Vegan Miso Ramen

Description

Ramen is a versatile and traditional Japanese dish that usually contains chicken broth or a pork-based broth and boiled eggs (depending on what part of Japan you’re in). With this recipe, we’re going for a traditional flavor but without any animal products.  Did you know there are more than 10,000 ramen shops in Japan?

I) Ingredients for miso ramen flavor paste (aka miso tare):

  • 2 tablespoons Gochujang (fermented chili garlic sauce) or a chili paste such as sambal oelek

  • 2 tablespoons smooth peanut butter (or for a more traditional option, you could use Japanese sesame paste)

  • 1 tablespoon fresh minced ginger

  • ¼ cup white miso paste (or a mix of white and red miso paste)

  • 2 tablespoons sake -dry Japanese rice wine

  • 2 tablespoons mirin - sweet Japanese rice wine

  • ½ teaspoon sesame oil

II) Ingredients for making the dish:

  • ✓ 4 dry ramen noodle cakes
  • ✓ 2 cloves garlic, minced
  • ✓ 4 cups low sodium broth (vegetable or vegan chicken flavor - store-bought or homemade)
  • ✓ 1 cup Asian cabbage, thinly sliced
  • ✓ ⅓ cup shredded carrots
  • ✓ 3 green onions (scallions)
  • ✓ 1 cup cooked edamame
  • ✓ Fresh microgreens (sunflower, broccoli, etc)
  1. Mix the ingredients for the miso flavor paste (miso tare) in a bowl and set aside.
  2. Cook ramen noodles, drain and set aside.
  3. Cook minced garlic for about 30 seconds in a few tablespoons of water. When fragrant, add the broth and bring to a simmer.
  4. Assemble your desired toppings and serving bowls.
  5. Add a spoonful of miso tare to each bowl and ladle in the desired amount of hot broth. Stir to dissolve miso tare, then add cooked ramen noodles, shredded cabbage, carrots, green onions, and edamame - and/or any other desired toppings

Notes: Consider adding other toppings, like cooked corn kernels, mushrooms, broccoli, cauliflower, etc.  Serve with sriracha sauce for some added heat.
