Description

(aka Gavurdagi Salad)

Serves 4-6

  • ✓ 4 medium tomatoes small diced
  • ✓ 2 cucumbers small diced
  • ✓ 2 green peppers small diced (seeds and white veins removed)
  • ✓ 1 onion finely chopped*
  • ✓ ½ bunch of parsley leaves finely chopped
  • ✓ 100 g of walnuts finely chopped
  • ✓ 4 tablespoons of pomegranate syrup
  • ✓ 1 tablespoon of freshly squeezed lemon juice
  • ✓ 1 teaspoon of sumac
  • ✓ Salt to taste
  • ✓ to garnish:
  • ✓ 5-6 walnut halves roughly chopped
  1. As much as possible, keep your vegetables (1st 4 ingredients) small, diced and evenly sized.
  2. Mix the first 6 ingredients in a large bowl.
  3. Mix the pomegranate syrup, fresh lemon juice and the sumac in a small bowl.
  4. Dress the mixed vegetables with the syrup mix from step 3.
  5. Garnish with the roughly chopped walnut halves and serve.

* If you don’t like the strong taste of raw onions, you may chop them ahead of time, sprinkle with some salt, gently rub it in and let it stand for 20-30 minutes. Before using, give them a rinse and add to your vegetable mix.

This salad is often served separately in small bowls as it has a tendency to become soupy with the dressing and the juice from the tomatoes.
