So Much Soul Food – Oven Roasted Okra

This is a healthier version of the fried okra, which is a much loved part of Soul Food.
Enjoy this crispy, spicy okra. While I like cutting the okra lengthwise, you may also
chop them into small rings, as done in the fried version.

  • ✓ 1 lb of okra (roughly 500 g) rinsed and dried
  • ✓ 1⁄4 teaspoon of garlic powder
  • ✓ 1⁄4 teaspoon onion powder
  • ✓ 1⁄4 teaspoon of salt
  • ✓ Freshly ground pepper (to taste)
  • ✓ Other spices & herbs of your choosing such as sweet or hot paprika, turmeric, “Old Bay”, Cajun mix, thyme, or others..
  1. Heat the oven to about 425’ F (about 220’ C)
  2. If the okras are tiny, smaller than a pinky finger, they can be used whole. Otherwise, cut the okra lengthwise. I keep the stem tips but you may cut them off if you like.
  3. Place the trimmed and cut okra in a bowl, add the spices and toss to coat the okra halves (or whole pieces).
  4. Cover a baking sheet with parchment paper and place the okra in a single layer, cut side down.
  5. Roast for about 20-25 minutes. Stir or turn them over about halfway and continue roasting.
  6. They’ll turn nicely browned and crispy. If you want them crispy, eat right away. Otherwise, if stored the crispness will not last but they will still be tasty.
