✓ 2 1⁄2 cups whole wheat pastry flour (can sub some unbleached all-purpose or gluten free, if needed)
✓ 1 tablespoon baking powder
✓ 1 1⁄2 teaspoons baking soda
✓ 1⁄2 teaspoon iodized sea salt
✓ 2 cups soy or oat milk (or your favorite non-dairy milk)
✓ 1 tablespoon apple cider vinegar
✓ 2 tablespoons maple or date syrup
✓ 2 teaspoons vanilla extract
✓ 2 tablespoons applesauce
✓ 1⁄4 cup vegan yogurt (store bought or homemade)
✓ 2 tablespoons chia seeds, ground into powder
Optional toppings
Bananas, sliced, blueberries, , sliced strawberries, raspberries, chocolate chips
chopped walnuts or pecans, cinnamon swirl (1 tsp cinnamon mixed with 2 tsp maple
syrup)
Instructions
Preheat oven to 500F
Whisk flour with baking powder, baking soda, and salt in a medium bowl
Whisk non-dairy milk with apple cider vinegar and vanilla. Add applesauce and maple or date syrup
Add wet ingredients to dry ingredients and combine with a whisk or a fork until just mixed, being careful not to over mix. Some lumps are ok.
Stir in ground chia seeds
Line a 13x18 rimmed baking sheet with parchment paper and pour in the batter. Add toppings of your choice and put the pan in the oven. Turn temp down to 400F and bake for 20-22 minutes, or until a toothpick comes out clean.
Cool 10 minutes before serving. Serve with warmed maple syrup or some vegan whipped cream and extra fruit and/or nuts.
