Onions seem to be a must in a large variety of my foods. red, yellow, white, sweet onions, shallots, scallions, chives, and the small white Mexican onions with the long green stems. Grilled, air fried, sauteed, steamed, or raw. Here is one of my favorite ways to meal prep my onions to use in many ways. I stir them into already cooked rice, plant-based meats, beans, grains or as another level of flavor for a variety of sandwiches, wraps, burritos or appetizers. These onions are sweet, spicy, creamy, and delicious. Fat free and salt free. They are a labor of love and take about 45 minutes of stirring.

  • ✓ 32 ounces of yellow and white onions ( not sweet onions )
  • ✓ 1- 1.5 cups of liquid, water or vegetable stock
  • ✓ 2 tablespoons of fresh minced garlic
  • ✓ 2 tablespoons of Monin Brand Old Smoke / concentrated flavor syrup
  • ✓ 1 tablespoon of Monin Brand Habanero / concentrated flavor syrup
  • ✓ 1 tablespoon pure maple syrup
  1. In a large non-stick pan add 1⁄2 cup of liquid and all the onions and cook over medium-high heat. Stir until all the onions are covered in the liquid. As the onions begin to soften add the garlic and stir. Add 1⁄2 cup more of the liquid and continue stirring for about 10 - 15 minutes until onions start turning a golden color.
  2. Now add the rest of the ingredients and stir until well incorporated. Turn the heat down to medium-low and stir every few minutes until the onions are a beautiful brown color. If the onions are starting to stick add a little of the liquid and stir.
  3. Depending on your pan and the heat from your stove you might use all the liquid. If I use an electric stove, I end up using only 1 cup, but on my gas stove and heavy button pan I end up using 1.5 cups of liquid.
  4. ** You can use an Instant Pot, to make this recipe, too: Just pour all the ingredients and 3⁄4 cup of liquid in at the same time and saute for about 5 minutes to make sure everything is incorporated. Now pressure cook for 20 minutes. Allow to slowly release pressure and if there is too much liquid leftover in the pot, saute for about 5 minutes.
