Slice 2 small leeks in half length-wise, removing the darker green top and the roots at the bottom, and wash larger leaves thoroughly, then chop (cross-wise) into thin slices; leeks can be dirty, so you may need to wash the slices again

In a stock pan without oil, cook leeks till limp and reduced
Add ground cumin, garlic powder, turmeric; stir and mix well

Add 1 1/2 cups water (or veg. stock) and 1/4 cup canned tomatoes; bring to a boil; lower heat and simmer, covered, for 15-20 minutes until done Serves 4.
