Quick and Easy Plant-Based Pizzas

Description

Who doesn’t love pizza? Pizza is the ultimate comfort food!  However, it’s the cheese and pepperoni that don’t love us back. Veggie pizzas are quick, easy, and best of all, delicious! They can be customized to accommodate any taste. Possibilities are endless.  And as a bonus, they are kid-approved! This recipe features vegan parmesan cheese. You can use any leftover vegan parmesan on your favorite pasta dishes, salads, or even baked potatoes or air fries. Serves 4.

I) For the plant-based parmesan cheese:

  • ¼ cup raw cashews

  • 2 tablespoons nutritional yeast

  • ¼ teaspoon onion powder

  • 1/8 teaspoon garlic powder

  • 1/8 teaspoon sea salt

 

II) For the veggie pizza:

  • ✓ 4 pitas, tortillas, or personal-sized pizza crusts
  • ✓ 1/2 cup tomato paste
  • ✓ 2 cups chopped fresh spinach
  • ✓ 1 cup sliced white mushrooms (or your favorite)
  • ✓ 4 tablespoons chopped red onions (white or yellow optional)
  • ✓ 4 tablespoons chopped green bell pepper (any color is fine)
  • ✓ ½ cup chopped fresh pineapple
  • ✓ 1 2.25 oz can sliced black olives (or olives of your choice)
  • ✓ 1-2 cloves fresh garlic (optional)
  • ✓ 2 tablespoons plant-based parmesan
  • ✓ 2 teaspoon Italian seasoning
  • ✓ Salt and pepper to taste (optional)
  • ✓ Fresh basil (optional)
  • ✓ Crushed red pepper (optional)
  1. Preheat the oven to 425 degrees.
  2. Spread 1-2 tablespoons of tomato paste on each crust.
  3. Next cover each crust with ½ cup of spinach, ¼ cup of mushrooms, 1 tablespoon each of onions, peppers, pineapple, and olives.
  4. Sprinkle on fresh garlic to taste. Sprinkle with ½ tablespoon of parmesan and ¼ tsp of Italian seasoning.
  5. Add salt and pepper to taste. Bake for 8-10 minutes. Watch closely because the edges can burn quickly.
  6. Top with fresh basil and crushed red pepper to serve.
