Description

Makes 10 – 12  tacos

  • ✓ 2 cups cold mashed Yukon potatoes
  • ✓ 1 cup favorite hummus
  • ✓ 1 cup vegetable stock
  • ✓ ¼ cup vegan mayo
  • ✓ Salt and pepper to taste
  • ✓ 2 tablespoons favorite hot sauce
  • ✓ Spray bottle filled with water
  1. In a large bowl add all the ingredients and mix into a creamy consistency, not runny.
  2. Salt and pepper to taste, and add hot sauce to your heat preference. Set aside. Now heat up the corn tortillas (10-12 of them), according to package directions.
  3. Heat air fryer to Air Crisp 375°
  4. Add 2 - 3 tablespoons of potato mixture into the tortilla and roll. Insert a toothpick to keep the tortilla from unrolling.
  5. Once all the tortillas are rolled up, layer them in a single layer in the air fryer.
  6. Spray taquitos with a light spray of water and air fry for 5 - 7 minutes. Cooking time depends on the type of Fryer you have.

Enjoy hot or cold, dipped in guacamole or your favorite salsa.
