In a large bowl add all the ingredients and mix into a creamy consistency, not runny.
Salt and pepper to taste, and add hot sauce to your heat preference. Set aside. Now heat up the corn tortillas (10-12 of them), according to package directions.
Heat air fryer to Air Crisp 375°
Add 2 - 3 tablespoons of potato mixture into the tortilla and roll. Insert a toothpick to keep the tortilla from unrolling.
Once all the tortillas are rolled up, layer them in a single layer in the air fryer.
Spray taquitos with a light spray of water and air fry for 5 - 7 minutes. Cooking time depends on the type of Fryer you have.
Enjoy hot or cold, dipped in guacamole or your favorite salsa.
