  • ✓ 2 ripe plantains, yellow with some browning. Cut into 1 inch rounds
  • ✓ 1 can - 15.5 oz black beans rinsed and drained
  • ✓ 1 cup vegetable stock
  • ✓ 2 teaspoons each of garlic powder and onion powder
  • ✓ 1 teaspoon ground cumin
  • ✓ 1/2 cup - Hernandez chipotle salsa cremosa

Pico de Gallo

 

  • 1 cup minced onions, tomatoes and cilantro

  • 1/4 cup minced and de-seeded serrano peppers ( 2 large peppers )

  • 2 tablespoons fresh lime juice

  • Salt and pepper to taste

Place plantains in the air fryer ( air crisp ) 400°F for 6 - 8 minutes turn halfway until golden brown. Place on parchment paper and let cool. Flatten slightly with bottom of a glass.

 

Bean Dip

 

In a heavy bottom pan heated to medium high add beans, stock and spices. Bring to a simmer and with a potato masher, mash beans until smooth. Add chipotle salsa and stir until well incorporated. Place a teaspoon full of mixture onto of plantains.

 

Pico de gallo

 

Add onions, tomatoes,  serrano peppers and cilantro in a bowl. Mix until well incorporated,  add fresh lime juice and salt & pepper to taste.

Sprinkle with pico de gallo or serve on the side and people can spoon the pico as they desire
