Oven Roasted Sweet Potatoes

I learned this recipe during my Rouxbe Professional Plant-based Certification Course and used ever since 😊

  • ✓ 2 cups sweet potatoes, peeled and cut in 1– inch cubes
  • ✓ 2 tbsp white balsamic vinegar
  • ✓ 1/4 tsp freshly ground black pepper
  • ✓ 1/4 tsp cinnamon
  1. Preheat the oven to 375°F (190°C) for a convection oven or 475°F (245°C) for a conventional oven.
  2. Toss the sweet potatoes with the vinegar, freshly-ground black pepper, and cinnamon.
  3. Spread out the potatoes evenly on a non–stick sheet pan, or one lined with parchment paper.
  4. Place in the oven and roast, turning vegetables over once, for 15-20 minutes or until tender and slightly browned.
  5. Let the potatoes cool until they are near room temperature if using in a salad. Otherwise you may also use them hot.

II) Oven Roasting Larger slices of Sweet Potatoes

You can also apply the above mentioned flavors to sweet potatoes cut in half lengthwise. The cooking time will be longer.

  1. Just prepare the sweet potatoes as described above.

  2. Place  them cut side down on a nonstick cookie sheet or one that is covered with parchment paper and let them roast for nearly 1 hour. They will be nicely caramelized.

You may also use different spices to achieve different flavor profiles, such as smoked paprika, chili powder, etc. Two that I like using to save time are Old Bay seasoning mix & the Trader Joe’s Chili Lime mix.

 I served guacamole over the sweet potatoes which was really lovely & delicious!
