Description

This beautiful salad has become a staple in my weekly meals. Feel free to interchange vegetables or add more. Make it extra creamy by using mayo and line juice instead of Balsamic Vinegar or use flavored Vinegars. Perfect for a picnic or when traveling.

  • ✓ 3 cups cooked orzo, multi color looks great as well
  • ✓ ½ cup diced of the following: purple onion, celery, black olives, multi colored peppers, hydrated sundried tomatoes
  • ✓ ½ cup toasted nuts / Pine nuts are my 1st choice
  • ✓ ½ to ¾ cup balsamic Vinegar
  • ✓ ¼ cup minced parsley
  1. Mix all ingredients together and let sit at room temperature for 30 minutes or overnight in the refrigerator.
  2. Serve as a side option or a main course with a steamed vegetable on the side, in a wrap or as a topping on a baked potato.
