Mexican Protein Bowl With Sweet Salsa

Growing up this type of meal was not typical to me in a bowl, oh but was it ever a meal in a burrito. Make it in a bowl or burrito ( large flour based tortilla ) and you’ve got a full meal. Perfect for packed lunches or picnics. Sure to become a favorite and an easy go for those busy mornings or those late evenings getting away from a stressful day at work or running errands.

Serves 4

  • ✓ 2 cups favorite rice
  • ✓ 1 cup of each of the following
  • ✓ Drained chickpeas, and black beans
  • ✓ Fire roasted corn
  • ✓ Shredded cabbage
  • ✓ Diced avocado
  • ✓ Diced mango
  • ✓ ½ cup chopped cilantro
  • ✓ ½ cup roasted pumpkin seeds
  • ✓ ¼ cup sliced pickled jalapenos ( * optional - always )
  1. Place rice in the bottom of a large bowl and layer in a pie wedge style.
  2. Top with pumpkin seeds and sliced jalapenos.
  3. Drizzle ¼ cup of the salsa and sprinkle the cilantro over the top of the salsa.

Feel free to exchange any of these ingredients for what you and your family enjoy. There is no right or wrong way to make this bowl.
