Grapefruit Bundt Cake

I) CAKE

  • ✓ 3 tablespoon ground flax seeds
  • ✓ 9 tablespoons of water
  • ✓ zest 1 grapefruit
  • ✓ 500 ml plant-based milk
  • ✓ 1⁄4 teaspoon vanilla
  • ✓ 320 g date or agave syrup
  • ✓ 350 g flour
  • ✓ 1-1⁄2 teaspoon baking powder
  • ✓ 1⁄2 teaspoon baking soda
  • ✓ 1 teaspoon salt

II) GLAZE

  • Juice 1⁄2 grapefruit

  • 50 g date or agave syrup

  • 100 ml water

I) CAKE

  1. Preheat oven to 350 degrees.
  2. In a small bowl whisk together the ground flax seeds and the water. Set aside to thicken into your “flax egg”.
  3. In a medium bowl mix together, the grapefruit zest, milk and vanilla Set aside.
  4. In a large bowl, place the date or agave syrup, flour, baking powde, baking soda and salt. Add the milk mixture followed by the flax egg and mix well (you can also do this in a stand mixer but don’t overwork the batter). Pour the mixture into the bundt tin and place in the oven. Bake for 45 minutes. While the cake is baking make the glaze.

II) GLAZE

  1. Place all the ingredients in a small saucepan over medium heat and bring to a

    simmer.

  2. Reduce the heat and allow to simmer for around 3 minutes or until the volume of the liquid has halved.

III) FINISH THE CAKE

  1. Once the cake is baked, remove it from the oven and leave it to rest somewhere

    cool in the bundt tin for 15 minutes.

  2. Once cooled slightly, carefully turn the cake out onto a metal wire rack. If the cake seems stuck, you can tap the tin down onto the rack quite firmly which should loosen it. Allow to cool for another 10 minutes.

  3. After 10 minutes, using a pastry brush, apply the glaze evenly to the cake (it should be very runny and will soak in nicely).

  4. Leave to cool completely.
