Description

Serves 4. Adapted from Rouxbe online cooking school recipes (Rouxbe.com).

for batter

  • ✓ 1 vanilla bean, scraped
  • ✓ 2 cups non–dairy milk
  • ✓ 1/3 cup cashew butter
  • ✓ 1/4 cup maple syrup
  • ✓ 2 tablespoons of cornstarch
  • ✓ 1/2 tablespoon cinnamon
  • ✓ 1/2 teaspoon freshly grated nutmeg
  • ✓ pinch of sea salt

to serve

 

  • your favorite whole grain bread, sliced in 1–inch thick slices

  • non-dairy butter (optional)

  • fresh berries or other fruit

  • Maple syrup

For the batter,

  1. add the first seven ingredients in a blender, whizz until smooth, and set aside.

 

To prepare the French toast,

  1. Pour the batter in a large bowl
  2. Place the sliced bread into the batter and soak for about 1 minute.
  3. If using plant-based butter: On a flat pan, flat grill or large fry pan, add 1 tablespoon of vegan butter and melt. Once melted, put slices of the soaked bread onto the grill or pan. Grill on medium heat for 3 to 4 minutes, flip the bread and cook until the other side is lightly golden.
  4. I usually skip the butter and use a non-stick pan for the same results.
  5. Serve with fresh fruits and maple syrup, and your other favorite toppings.
