Remove the seeds from the peaches, and place two peaches in a blender.
Add 4 dates and the lemon juice to the blender, and blend until smooth.
Dice the remaining 4 peaches, and put them in a mixing bowl.
Add the peach/date mixture, and stir.
Add the oats, remaining 6 dates, vanilla extract and salt (optional) to a food processor fitted with the S-blade.
Process just until the mixture begins to hold together but is still crumbly.
Pour peach mixture into individual serving dishes or into one larger glass serving dish, and top with the crumble.
