Add pitted dates and filtered water in a microwave bowl and heat for 1 min. Allow to soak for about 10 min.
Blend the dates and vanilla with the water in a small cup blender until smooth.
Heat up the chocolate chips in a microwave until melted.
In a silicone mold of whatever shape preferred (Ava demonstrated little fish), add a layer of melted chocolate and place in freezer for about 10 minutes.
Take out the molds and add a small ball of date carmel mixture. Add a top layer of melted chocolate and place back into the freezer.
In about 30‐45 minutes, the chocolates should be hard enough to carefully get out of the molds.
