Description

This is a quick salad that provides a boost of powerful antioxidants!

  • ✓ 2 cups of jicama, cut into sticks
  • ✓ 2 cups fresh cherries, pitted and halved
  • ✓ 20 fresh mint leaves, chopped

Dressing (optional)

Ingredients

  • ¼ cup fresh lemon juice

  • 1 Tablespoon poppy seeds

  • 1 – 1 ½ Tablespoons agave or maple syrup

  1. Place the jicama, cherries, and mint leaves in a pretty salad bowl and toss until mixed together.
  2. To make the dressing, just add all the ingredients in a small bowl and whisk together.
  3. Drizzle the dressing on the salad and mix up well.

Enjoy this as a great side salad, as a healthy snack, or a dessert.
