In a medium pan, add maple syrup, pecans, salt, and cinnamon. Place on the stove top and cook at medium temperature for about 5- 7 minutes, stirring frequently to make sure it does not burn.
Add the oats and coconut and mix until well incorporated and it gets nice and hot.
Shut off the burner and transfer onto a baking sheet lined with parchment paper.
Let it cool.
If you want the granola more crunchy, put the granola (on the baking sheet) in the preheated oven at 325 degrees for about 15-20 minutes.
