Dry Ingredients:

  • 1 1⁄2 cups whole wheat flour (or gluten-free flour)
  • 1/3 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1⁄2 teaspoon sea salt

 

Wet Ingredients:

  • ✓ 1 cup maple syrup
  • ✓ 1 1⁄2 cups coconut milk
  • ✓ 2 Tablespoons apple cider vinegar
  • ✓ 2 teaspoons pure vanilla extract
  1. Preheat oven to 350°F.
  2. Line muffin pans with cupcake liners.
  3. In a large bowl whisk together dry ingredients.
  4. In a medium bowl whisk together wet ingredients.
  5. Add the wet ingredients to the dry ingredients in the large bowl and whisk till just combined; do not overmix.
  6. Fill the cupcake liners about two-thirds of the way with the batter.
  7. Bake 18-20 minutes or until a toothpick inserted into the center of a cupcake comes out clean with a few crumbs clinging to it.
