Preheat oven to 350°F.
Line muffin pans with cupcake liners.
In a large bowl whisk together dry ingredients.
In a medium bowl whisk together wet ingredients.
Add the wet ingredients to the dry ingredients in the large bowl and whisk till just combined; do not overmix.
Fill the cupcake liners about two-thirds of the way with the batter.
Bake 18-20 minutes or until a toothpick inserted into the center of a cupcake comes out clean with a few crumbs clinging to it.
