Description

Serves 4 (adapted from the recipe on MinimalistBaker.com website) This recipe does not require cooking, and can be done overnight or has to be made 3 to 5 hours ahead of serving time.

  • ✓ 1⁄4 cup cocoa powder (I use unsweetened and non-alkalized cocoa powder)
  • ✓ 3-5 tablespoons of maple syrup
  • ✓ 1⁄2 teaspoon of ground cinnamon
  • ✓ 1⁄2 teaspoon of vanilla extract or the seeds from a vanilla pod of about 1 inch length
  • ✓ A pinch of salt (optional)
  • ✓ 1 1⁄2 cups of almond milk or other plant-based milk ( I use soya milk)
  • ✓ 1⁄2 cup of chia seeds
  1. Sift the cocoa powder into a mixing bowl, this will remove any lumps there may be, then add the maple syrup, cinnamon, salt and vanilla and whisk to combine.
  2. Then add the plant-based milk a little at a time until a smooth paste forms; keep adding the plant-based milk until all is used and the mixture is smooth.
  3. Add the chia seeds and whisk again to mix it all well.
  4. Cover and refrigerate overnight or let it set for 3-5 hours. It is a good idea to whisk it again after the mixture has been in the fridge for about 40 minutes.
  5. Once done, scoop it into small serving bowls, topping it with cashew cream or other dairy free whipping cream and colorful berries.
