Chickpea Stew

Description

This is a recipe that has been modified over time, no single source to credit. This is comfort food for our younger son, and for us (parents) so that we can feed him even though he’s not a 100% plant-based eater. The spices from India give this plate an aromatic and flavorful character.

  • ✓ 1 onion (medium, yellow), diced
  • ✓ 3 cloves of garlic finely chopped
  • ✓ 1 can diced tomatoes
  • ✓ 1 tablespoon of tomato paste
  • ✓ 1 teaspoon of turmeric powder
  • ✓ 1 teaspoon of curry
  • ✓ ½ teaspoon of paprika
  • ✓ 3 cans of pre-cooked chickpeas
  • ✓ 2 tablespoons of garam masala
  • ✓ 1/2 teaspoon of coriander
  • ✓ 1 tablespoon of cumin powder
  • ✓ ½ coconut milk or soy milk
  • ✓ ½ cup of vegetable broth
  • ✓ 1 cup of frozen vegetables mix
  • ✓ ½ cup of chopped leafy green vegetables of your choice

Part 1 (5 minutes)

  1. Set the stove to high and add in a small amount of vegetable broth or water.
  2. Once vegetable broth or water is very hot, add in garlic, onions and stir.
  3. Add turmeric and stir. Cook until onions are slightly caramelized.
  4. Add in tomato paste and cook for two minutes.
  5. Add turmeric, garam masala, coriander, cumin and cinnamon with the diced tomatoes and let it cook for 5 minutes.
  6. Add salt and pepper to taste.

Part 2

  1. Add in chickpeas with vegetable broth, stir and bring to boil (5 minutes).

  2. Then reduce to a low-medium heat.

 

Part 3

  1. Add coconut milk or cream and simmer for 5 minutes.

  2. Add mixed vegetables and cook for 5 minutes.

  3. Reduce heat to low and let it cook for 10 minutes, taste and adjust salt if necessary. Turn off heat and add chopped power green.

 

Storage and serving: This dish stores well in the fridge and freezes well and it always tastes even better the next day. We serve with hot, steamed brown rice, or pita bread or baked sweet potatoes. Enjoy this hearty meal!
