Dissolve the agar powder in the room temperature water in a small pot. Then, bring it to a boil, stirring constantly for 1 - 2 minutes. Remove it from the heat.
Add the remaining ingredients, except for the topping(s), to a blender, and blend until smooth.
Add the agar mixture to the blender, and blend again until incorporated.
Pour into ramekins or dessert glasses, and chill for at least 2 hours.
(Optional) Top with extra cherries and or granola or oats and dates processed into a crumble.
