This is a great addition to a charcuterie board, served on celery, prepared as a cheez cracker, or used as a delicious spread on your favorite sandwich.
Ingredients
✓ 1 cup sunflower seeds
✓ 1 cup pumpkin seeds
✓ ½ cup lemon juice
✓ 6 tablespoons water, or more as needed
✓ 2 tablespoons nutritional yeast
✓ 2 tablespoons miso paste
✓ 2 teaspoons garlic powder
✓ 1 teaspoon dried dill
✓ ½ teaspoon Chili pepper, if desired
Instructions
Submerge pumpkin and sunflower seeds in water overnight or boil in water for 15 minutes
Drain and place in a high speed blender, such as a Vitamix
Add the rest of the ingredients and blend, gradually increasing to a high speed. Stop frequently and scrape down the sides with a spatula. Blend until consistency is smooth
Place in a bowl or if you prefer shape into a ball and place in a mold lined with parchment or plastic wrap
