Description

This is a versatile sauce which goes well with pasta. When making a risotto, if you add this sauce towards the end, it makes the dish very creamy and flavorful. The cauliflower sauce also goes very well with oven roasted veggies., especially eggplants. You may also change the flavor profile of this sauce by adding other spices and/or herbs, such as curry powder, fresh tarragon, basil, etc. If using over pasta (or with risotto) you may garnish cashew parmesan, parsley and crushed red pepper and lemon zest. This sauce freezes well. In the photo it is served with pasta and broccoli and topped with cashew parmesan.

  • ✓ Makes 4 Servings
  • ✓ 1 cup white beans, rinsed and drained if from a can)
  • ✓ 1 cup cooked cauliflower florets
  • ✓ 1⁄2 cup unsweetened vegetable milk (optional - I usually use the pasta cooking water)
  • ✓ 2 tablespoons nutritional yeast
  • ✓ 1 tablespoon lemon juice (adjust to taste, add more for more zing!)
  • ✓ 1 teaspoon of white miso
  • ✓ 1/2 teaspoon garlic powder
  • ✓ 1/2 teaspoon onion powder
  • ✓ 1/2 teaspoon salt (optional, as the nutritional yeast and miso also provide salt)
  • ✓ 1/4 teaspoon black pepper (or to taste)
  • ✓ 1/4 teaspoon dried rosemary
  • ✓ 1⁄4 cup of chopped parsley, optional
  • ✓ 1 teaspoon of lemon zest (optional)
  • ✓ Chili flakes (optional)
  1. Add the beans, cauliflower, vegetable milk (or water), nutritional yeast, lemon juice, garlic powder, onion powder, salt, pepper, and rosemary to a blender. Take care with the water (or vegetable milk), adding half at first to avoid having a very liquid sauce. You may always add more later to thin the sauce if necessary.
  2. Blend until smooth and creamy.
